A favourite pasta sauce and bread team up any time to make a popular meal. Use up any stale bread (or hasten the process yourself, see Tip below) and any cheese that you have on hand as long as it isn't too salty — soft or hard, low-fat or regular. Spoon the soft cheeses such as ricotta and shred any others such as mozzarella, provolone, fontina or Cheddar. A crunchy-fresh leafy salad completes the meal nicely.

Ingredients

  • 4 eggs
  • 1 cup milk
  • 1 jar (375 mL) pasta sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 10  slices (1/2 inch/1 cm thick) Italian-style bread
  • 1 can (10 oz/284 mL) sliced mushrooms, drained and rinsed
  • 2 cups shredded cheese

Preparation

In bowl, whisk eggs with milk.

In separate small bowl, stir together pasta sauce, oregano and basil.

Arrange enough of the bread in single layer to cover bottom of greased 8-inch (2 L) square baking dish, trimming to fit. Pour one-third of the egg mixture over top; spread with one-third of the pasta sauce mixture. Sprinkle with half of the mushrooms, then one third of the cheese. Repeat layers once. Top with remaining bread, egg, sauce and cheese.

Bake in 350°F (180°C) oven for about 50 minutes or until puffed and sides are golden. Let stand for 5 minutes.

Additional information :

Tip: To hasten the process of making bread stale, let slices stand, uncovered and at room temperature, in single layer overnight, or heat in 250°F (120°C) oven for about 20 minutes.
