For the freshest flavour and texture, poach your own shrimp, however you can buy already cooked shrimp if you like.

1 onion, sliced
Half lemon, sliced
2 bay leaves
3 stalks parsley
1 tbsp (15 mL) whole coriander seeds
1 tsp (5 mL) peppercorns
1/2 tsp (2 mL) salt
1 lb (500 g) large raw shrimp, peeled and deveined
Preparation:
In saucepan, bring 4 cups (1 L) water to boil; add onion, lemon, bay leaves, parsley, coriander seeds, peppercorns and salt. Reduce heat, cover and simmer for 15 minutes. Strain into clean saucepan; bring to boil over high heat. Add shrimp; cook until pink and opaque, 2 to 3 minutes. Drain and let cool. (Make-ahead: Refrigerate in airtight container for up to 24 hours.)
