Poppy Seed Butter Cookies
These buttery rounds sprinkled with poppy seeds are a beautiful contrast in taste and appearance to the usual Christmas nut-and-fruit confections. A poppyseed sweet, of which these Ciastka Z Makiem are an example, is traditionally served at a Polish Wigilia with the fruit compote.

Ingredients:

Dough:
1 cup (250 mL) unsalted butter
3/4 cup (175 mL) granulated sugar
1 tsp (5 mL) vanilla
1/2 tsp (2 mL) grated lemon rind
5 hard-cooked egg yolks
2 cups (500 mL) all-purpose flour
1/2 tsp (2 mL) salt
Glaze:
1 egg white
1 tsp (5 mL) water
1/4 cup (50 mL) poppy seeds
Preparation:
Dough: Cream together butter and sugar. Stir in vanilla and lemon rind. Press egg yolks though a sieve and add to creamed mixture along with flour and sa< mix well. Shape into ball; wrap in plastic wrap and chill until firm enough to roll, about 1 hour.
Using pastry cloth and rolling pin with cover, roll out dough to1/4-inch (5 mm) thickness; cut into rounds using a fluted 1-3/4 inch (4 cm} cutter. Arrange on 2 greased baking sheets.
Glaze: Whisk together egg white and water. Brush some over each cookie and sprinkle lightly with poppy seeds. Bake in 350°F (180C) oven for 10 minutes or until lightly browned. Let cool on racks and store in airtight container(s).
