Porcini Burgers with Caramelized Onions

Thanks to the mushrooms, this has the taste of luxury. If that doesn't make it special enough, Chive Mayonnaise (recipe follows) and caramelized onions will.

Ingredients

  • 1/2 pkg (14 g) dried porcini mushrooms
  • 1 egg
  • 2 tbsp water
  • 2 tbsp dry breadcrumbs
  • 1 small onion, grated
  • 2 tsp Dijon mustard
  • 1 tsp chopped fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 lb lean ground beef
  • 4 whole grain buns
  • Caramelized Onions:
  • 1 tbsp extra-virgin olive oil
  • 2 onions, sliced
  • 1 tbsp chopped fresh thyme
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preparation

Caramelized Onions: In skillet, heat oil over medium-high heat; saut?nions, thyme, salt and pepper for 5 minutes. Reduce heat to medium-low; fry, stirring often, until golden, 20 minutes. (Make-ahead: Let cool; refrigerate in airtight container for up to 3 days. Rewarm.)

Meanwhile, in clean coffee or spice grinder, grind mushrooms until powdery. Transfer to bowl. Beat in egg and water; stir in bread crumbs, onion, mustard, thyme, salt and pepper. Add beef; mix just until combined. Shape into four 3/4-inch (2 cm) thick patties. (Make-ahead: Layer between waxed paper in airtight container; refrigerate for up to 24 hours or freeze for up to 1 month. Thaw in refrigerator.)

Place patties on greased grill over medium heat; close lid and grill, turning once, until digital thermometer inserted sideways into centre reads 160°F (71°C), 12 to 14 minutes. Top patties with caramelized onions. Sandwich in buns.

Additional information : Chive Mayonnaise:
Combine 1/2 cup (125 mL) light mayonnaise and 2 tbsp (25 mL) minced fresh chives or green onions. (Make-ahead: Cover and refrigerate for up to 2 days.) Makes about 1/2 cup (125 mL).
