Porcini Salt

Flavoured sea salts are one of the new trends in specialty food shops. Chefs like to use them as finishing salts sprinkled on food just before serving. This woodsy mushroom-flavoured salt takes roasts and steaks to new heights. – Rheanna Kish

    1 pkg (14 g) dried porcini mushrooms
    1/4 cup (50 mL) sea salt
    Pinch grated nutmeg

Preparation:

In clean spice or coffee grinder, pulse together mushrooms, salt and nutmeg, in 2 batches, until powdery with a few larger mushroom pieces. Store in airtight container in cool dark place for up to 1 month.
