Pork Chops and Applesauce

This classic combination is comfort food for little palates, too. For variety, replace the apple with pears or prunes. Try to choose pork that isn't seasoned, which adds unnecessary salt to this meal.

Suggested Recipes

2 tsp (10 mL) canola oil
1/4 cup (50 mL) thinly sliced onion
6 oz (175 g) boneless pork loin chop, sliced
1 Golden Delicious apple, peeled, cored and sliced
1/2 cup (125 mL) unsweetened pure apple juice (approx)
Preparation:
Add pork; cook for about 3 minutes or until browned.
Stir in apple; cook until golden and starting to soften, about 5 minutes. Stir in apple juice, scraping up any brown bits; bring to simmer. Cover and cook until apple is tender and pork can be shredded easily, about 20 minutes. Let cool.
In blender or food processor, purée pork mixture to desired consistency, adding up to 1/4 cup (50 mL) more apple juice if desired. (Make-ahead: Refrigerate in airtight container for up to 3 days.)
