Ingredients
- 1 red skinned potato 1 1red skinned potato
- 1 cup frozen green beans 1 1cup cupfrozen green beans
- 1 tsp extra-virgin olive oil 1 1tsp tspextra-virgin olive oil
- Pinch each salt and pepper Pinch Pincheach salt and pepper
- 1 tsp chopped fresh coriander , if desired1 1tsp tspchopped fresh coriander or parsley, if desired
Preparation
Slice potato into finger-size strips. Cover and cook in saucepan of boiling salted water until tender, about 8 minutes. Add green beans and heat through; drain and return to pot.
Add olive oil, salt and pepper; heat through. Add coriander, if desired.
