This blend is adapted from a Japanese green tea that contains toasted puffed rice. We use puffed wild rice and add cranberry-like rose hips for a fruit-and-nut variation. After bringing fresh water to a boil, remove it from the heat and let it stand for 2 minutes before pouring over leaves; the right temperature is essential for bringing out the best flavour.

Ingredients

  • 1/4 cup wild rice 1/4 cup wild rice
  • 1 cup green tea leaves , such as Japanese Sencha1 cup green tea leaves, such as Japanese Sencha

Preparation

Heat nonstick skillet over medium-high heat until hot. Add wild rice; toast, shaking constantly, until most kernels are puffed and brown, about 30 seconds. Transfer to bowl and let cool.

Add tea leaves to bowl and mix to combine. Spoon into decorative bag or airtight jar. Makes about 30 servings.

VARIATION
Wild Rose Green Tea: Reduce wild rice to 2 tbsp (25 mL). Add 1/4 cup (50 mL)
dried rose hips.
