Ingredients

  • 2 apples
  • 1 teaspoon lemon juice
  • 1 can green lentils drained and rinsed
  • 1 cup diagonally sliced celery
  • 2 green onions thinly sliced
  • 8 hearts of romaine lettuce leaves
Dressing:
  • 2 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 pinch granulated sugar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Method

Cut apples into quarters; core and thinly slice. In bowl, toss apples with lemon juice. Add lentils, celery and green onions. Set aside.

Dressing: In small bowl, whisk together lemon juice, oil, sugar, oregano, salt and pepper; add to lentil mixture and toss to combine. Serve on romaine leaves.
