Wake up inexpensive chicken drumsticks with this simple coating of 7 healthy spices -- cumin, coriander, cinnamon, lemon rind, salt, pepper and cayenne.

  • Portion size 4 servings

Ingredients

  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon grated lemon rind
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pinch cayenne pepper
  • 8 chicken drumsticks (or 4 chicken breasts (2 lb/1 kg)

Method

In large bowl, combine cumin, coriander, cinnamon, lemon rind, salt, pepper and cayenne. Add chicken; turn to coat.

Place chicken on foil-lined rimmed baking sheet; bake in 425°F (220°C) oven until juices run clear when chicken is pierced and skin is browned and crispy, about 30 minutes.
