Cabbage Salad with Ginger Dressing

Ingredients

  • 1/4 cup rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon grated gingerroot
  • 4 cups finely shredded cabbage (1/3 of a cabbage approx.)
  • 1 cup julienned carrots

Method

In small bowl, whisk together vinegar, soy sauce, sugar and gingerroot. Set dressing aside.

Toss cabbage with carrots. Divide among 4 plates. Drizzle with dressing.

Makes 4 servings.
