Cracked Wheat Salad

Ingredients

  • 2 cups boiling water
  • 1 cup bulgur
  • 1/2 cup minced fresh parsley
  • 3 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt

Method

In heatproof bowl, pour boiling water over bulgur; cover and let stand until tender, 15 minutes.

Drain, squeezing out as much water as possible; return to bowl. Stir in parsley, lemon juice, olive oil, and salt.
