Easy Bouillabaisse

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup finely chopped shallots
  • 1/2 cup finely chopped onion
  • 1 bay leaf
  • 2 plum tomatoes seeded and chopped
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1 bottle (240 ml) clam juice
  • 1/2 cup white wine
  • 1/2 cup water
  • 1 lb mussel scrubbed
  • 8 oz halibut fillets cubed
  • 8 oz cod fillets cubed
  • 2 tablespoons chopped fresh parsley

Method

In large saucepan, heat oil with butter over medium heat; cook shallots and bay leaf, stirring often, until shallots are softened, about 3 minutes.

Stir in tomatoes, garlic and salt; cook, stirring, for 1 minute. Stir in clam juice, wine and 1 cup (250 mL) water; bring to boil. Reduce heat, cover and simmer for 10 minutes.

Add mussels and halibut; cover and cook until mussels open and fish flakes easily when tested, about 6 minutes. Discard bay leaf and any mussels that do not open. Stir in parsley.
