Grated Carrot Salad

Ingredients

  • 1/4 cup low-fat plain yogurt
  • 1/4 cup light mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 1/2 cups shredded carrots
  • 1 green onion chopped

Method

In bowl, stir together yogurt, mayonnaise, mustard, lemon juice, salt and pepper. Mix in carrots and green onion. (Make-ahead: Cover and refrigerate for up to 24 hours.)
