A simple fresh salsa brings grilled pork chops to life. This dish pairs nicely with Herbed Israeli Couscous, but feel free to serve it with your favourite grain or potato, or a mess of grilled vegetables.

Ingredients

  • 4 boneless centre-cut fast-fry pork chops (about 1 lb/450 g total)
  • 1 pinch salt
  • 1 pinch pepper
Salsa:
  • 1/2 cup chopped grape tomato
  • 1/3 cup finely diced red onion
  • 1/3 cup sliced pitted black olives
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar

Method

Sprinkle pork with salt and pepper. Place on greased grill over medium-high heat; close lid and grill, turning once, until just a hint of pink remains inside, 10 to 12 minutes.

Salsa: In small bowl, stir together tomatoes, onion, olives, oregano, oil and vinegar; serve with chops.
