Herbed Israeli Couscous

Ingredients

  • 1 3/4 cup water
  • 1 1/2 cup Israeli couscous
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Method

In saucepan, bring water to boil; add Israeli couscous. Cover and simmer until no liquid remains, about 8 minutes.

Stir in butter or olive oil, parsley, mint, salt and pepper.
