- 4 baking potatoes
- 4 sweet potatoes
- 1 red onion thinly sliced
- 1 teaspoon extra-virgin olive oil
- 1/4 teaspoon fresh rosemary
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Scrub potatoes. Cut at 1/2-inch (1 cm) intervals almost but not all the way through. Fill slits with thinly sliced red onion; sprinkle each potato with olive oil, rosemary, salt and pepper.
Microwave at High until fork-tender, about 10 minutes. Slip 2 metal skewers through centre of each. Place on greased grill over medium-high heat; close lid and grill for 10 minutes, turning once.
