Mixed Greens with Sun-Dried Tomato Vinaigrette

Dress up your regular salad with torn lettuce by drizzling some homemade tomato vinaigrette, made with good quality olive oil, on top.

Ingredients

  • 2 tablespoons finely diced oil-packed sun-dried tomatoes
  • 2 tablespoons finely diced oil-packed sun-dried tomato pesto
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon pepper
  • 4 cups torn lettuce
  • 2 celery hearts thinly sliced
  • 1 carrots thinly sliced

Method

In large bowl, whisk together sun-dried tomato pesto, olive oil and pepper. Add lettuce, celery heart and carrot. Toss to coat.
