Quick Cucumber Pickles

Ingredients

  • 1 English cucumber very thinly sliced
  • 1/2 teaspoon salt
  • 2 tablespoons rice vinegar
  • 2 teaspoons granulated sugar
  • 2 teaspoons sesame oil
  • 3 cloves garlic minced
  • 1/2 teaspoon hot pepper flakes

Method

In colander, toss English cucumber with salt; let stand for 15 minutes. Drain and squeeze. In bowl, toss together cucumber, rice vinegar, sugar, sesame oil, garlic and hot pepper flakes.
