Roasted Harvest Vegetables

Ingredients

  • 3 cups cauliflower florets
  • 8 mini red potatoes halved
  • 2 apples cored and chopped
  • 1 sweet potato peeled and cubed
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Method

In roasting pan, toss cauliflower florets, red potatoes, apples, sweet potato, olive oil, salt and pepper. Roast in 375°F (190°C) oven until tender, 40 to 50 minutes.
