Romaine and Radicchio Salad with Vinaigrette

Ingredients

  • 4 cups torn romaine leaves
  • 2 cups torn radicchio leaves
  • 1/2 English cucumber sliced
  • 3 tablespoons extra-virgin olive oil
  • 4 teaspoons wine vinegar
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon each of salt and pepper

Method

In salad bowl, toss together romaine leaves, radicchio leaves and English cucumber. In small bowl, whisk together olive oil, wine vinegar, parsley, salt and pepper.
