Romaine Salad with Fresh Lemon Dressing

Ingredients

  • 1 cup radish grated
  • 1/2 English cucumber sliced
  • 4 cups romaine hearts chopped
Dressing:
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons green onions thinly sliced
  • 1 garlic clove minced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 pinch sugar

Method

In measuring cup, whisk together olive oil, lemon juice, green onions, garlic, cumin, salt and sugar. Set dressing aside.

Cut cucumber in half lengthwise; thinly slice on diagonal. Place in salad bowl. Add romaine lettuce and radishes to cucumber in bowl. Add dressing and toss to coat well.
