Method

Scrub potatoes; cut into 1/2-inch (1 cm) cubes. In saucepan of boiling salted water, cook potatoes for about 10 minutes or just until tender. Drain well and return to pot.

Whisk together oil, vinegar and mustard; stir into potatoes. Sprinkle with onion and Brie. Warm over low heat until cheese softens, about 2 minutes; stir gently. Season with salt and pepper to taste.

Divide among 4 lettuce-lined plates. Garnish with radishes and parsley. Serve with sausages.
