MethodIn bowl, beat egg with fork; mix in beef, cheese, apple, bread crumbs, salt and pepper. Shape into four 1/2-inch (1 cm) thick patties.
In cast-iron or nonstick skillet, fry patties over medium-high heat, turning once, until thermometer inserted sideways into centre registers 160º F (71º C), about 12 minutes.
Meanwhile, whisk together Dijon mustard and mayonnaise. Sandwich burgers in buns; top with mustard mixture, and alfalfa sprouts (if using).
