Spinach Sprout Salad

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons chopped fresh basil
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon each of salt and pepper
  • 4 cups baby spinach
  • 1 cup cherry tomato quartered
  • 1/2 cup alfalfa sprouts

Method

In bowl, whisk olive oil, balsamic vinegar, basil, sugar, salt and pepper. Add spinach and cherry tomatoes; toss to coat. Top with alfalfa sprouts.
