Tomato Mint Salad

Ingredients

  • 2 cups cherry tomatoes quartered
  • 2 tablespoons minced fresh mint
  • 2 tablespoons lemon juice
  • 2 green onions sliced
  • 1/2 jalapeno pepper seeded and diced
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt

Method

In bowl, toss together tomatoes, mint, lemon juice, green onions, jalapeno pepper, vegetable oil and salt. Let stand for 10 minutes before serving.
