Ingredients

  • 1 lb mild Italian turkey sausage
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon liquid honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried thyme
  • 6 cups chopped loosely packed escarole
  • 2 cups chopped loosely packed curly endive
  • 1 carrots peeled and grated
  • 1 Gala apple cored and thinly sliced
  • 1/2 cup sliced English cucumber
  • 1/3 cup walnut toasted and chopped
  • 1/4 cup sliced red onion

Method

Broil or grill sausage over medium-high heat, turning occasionally, until browned and
no longer pink in centre, 18 to 20 minutes. Slice thickly.

Meanwhile, in large bowl, whisk together oil, vinegar, mustard, honey, salt, pepper and thyme.

Add escarole, endive, carrot, apple, cucumber, walnuts and onion to bowl. Add sausage and toss to coat.
