2 cups (500 mL) thinly sliced onions
2 cloves garlic, minced
1 tbsp (15 mL) extra-virgin olive oil
1/4 tsp (2 mL) each salt and pepper
4 trout or salmon fillets (6 oz/175 g each)
Gremolada:
1/4 cup (50 mL) finely chopped fresh parsley
2 tsp (10 mL) finely grated lemon rind
1 clove garlic, minced
Preparation:
In microwaveable bowl, combine onions, garlic, oil, salt and pepper; cover and microwave at High, stirring twice, until softened, about 5 minutes.
Gremolada: Meanwhile, in small bowl, combine parsley, lemon rind and garlic; set aside.
Spread onion mixture in 13- x 9-inch (3 L) glass baking dish. Arrange fish over top; sprinkle with gremolada.
Roast fish in bottom third of 425°F (220°C) oven until fish flakes easily when tested, about 10 minutes.
Additional Information

Tips: If you have a large microwave oven, you can microwave the onions right in the baking dish to save on cleanup.
To speed up preparation time, look for bottled minced garlic in the produce section of the supermarket.
