Apple, Celery and Lentil Salad

Ingredients
- 2 small apples
- 1 tsp lemon juice
- 1 can (19 oz/540 mL) green lentils, drained and rinsed
- 1 cup diagonally sliced celery
- 2 green onions, thinly sliced
- 8 hearts of romaine lettuce, leaves
- Dressing:
- 2 tbsp lemon juice
- 2 tbsp extra-virgin olive oil
- 1 pinch granulated sugar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
Preparation
Cut apples into quarters; core and thinly slice. In bowl, toss apples with lemon juice. Add lentils, celery and green onions. Set aside.
Dressing: In small bowl, whisk together lemon juice, oil, sugar, oregano, salt and pepper; add to lentil mixture and toss to combine. Serve on romaine leaves.
