2 small apples
1 tsp (5 mL) lemon juice
1 can (19 oz/540 mL) green lentils, drained and rinsed
1 cup (250 mL) diagonally sliced celery
2 green onions, thinly sliced
8 hearts of romaine lettuce leaves
Dressing:
2 tbsp (25 mL) lemon juice
2 tbsp (25 mL) extra-virgin olive oil
Pinch granulated sugar
1 tsp (5 mL) dried oregano
1/2 tsp (2 mL) each salt and pepper
Preparation:
Cut apples into quarters; core and thinly slice. In bowl, toss apples with lemon juice. Add lentils, celery and green onions. Set aside.
Dressing: In small bowl, whisk together lemon juice, oil, sugar, oregano, salt and pepper; add to lentil mixture and toss to combine. Serve on romaine leaves.
