Preparation:

In large bowl, combine cumin, coriander, cinnamon, lemon rind, salt, pepper and cayenne. Add chicken; turn to coat.

Place chicken on foil-lined rimmed baking sheet; bake in 425°F (220°C) oven until juices run clear when chicken is pierced and skin is browned and crispy, about 30 minutes.

Additional Information

  • Tip: Bake chicken and squash at the same time, rotating and switching baking sheets halfway through.
