Barbecued Tuna Pizzas

1/2 cup (125 mL) pizza or pasta sauce
4 whole wheat Greek pitas or plain pita pockets
4 plum_tomatoes (12 oz/375 g), chopped
Half sweet green pepper, sliced
1/2 cup (125 mL) corn kernels
1 jar (6 oz/170 mL) marinated artichoke hearts, drained and sliced
1 can (6 oz/ 170 g) tuna, drained
1/4 tsp (1 mL) pepper
1 cup (250 mL) shredded asiago or provolone cheese
Preparation:
Spread pizza sauce over pitas. Divide tomatoes, green pepper, corn and artichoke hearts over sauce. Break tuna into chunks; arrange on pizzas. Sprinkle with pepper then cheese.
Place on greased grill over medium heat; close lid and grill until cheese is melted and toppings are hot, about 10 minutes. Or bake on rimmed baking sheet in bottom third of 450°F (230°C) oven for same time. Transfer to cutting board; cut into wedges.

Tips
You can replace the canned tuna with canned salmon. Or use leftover grilled chicken, pork or steak. Also, check out the deli section of the supermarket for smoked ham, chicken, corned beef or pastrami.Use whole wheat Greek pitas for increased fibre , but you can substitute white pitas.
