Best Bean Toss
Servings: 2
Ingredients:

8 oz (250 g) green and/or wax beans
2 tbsp (25 mL) extra-virgin olive oil
4 tsp (20 mL) orange juice
1/4 cup (50 mL) (scant) thinly sliced red onion
Pinch each salt and pepper
Preparation:
In saucepan of boiling salted water, cook beans until tender-crisp, 3 to 5 minutes; drain.
In bowl, whisk together olive oil, orange juice, onion, salt and pepper. Toss with beans.
