Ingredients
- 8 oz green beans 8 8oz ozgreen beangreen beans or wax beans
- 2 tbsp extra-virgin olive oil 2 2tbsp tbspextra-virgin olive oil
- 4 tsp orange juice 4 4tsp tsporange juice
- 1/4 cup thinly sliced red onion 1/4 1/4cup cupthinly sliced red onion
- pinch salt pinch pinchsalt
- pinch pepper pinch pinchpepper
Preparation
In saucepan of boiling salted water, cook 8 oz (250 g) green and/or wax beans until tender-crisp, 3 to 5 minutes; drain.
In bowl, whisk together 2 tbsp (25 mL) extra-virgin olive oil; 4 tsp (20 mL) orange juice; scant 1/4 cup (50 mL) thinly sliced red onion; and pinch each salt and pepper. Toss with beans.
Makes 2 servings.
