Crisp, smoky quesadillas are the ultimate quick dinner but also make a great party appetizer. You can just as easily make them on the grill as in a skillet. Just brush the outside with olive oil before grilling.
Ingredients
- 1 can (19 oz/540 mL) black beans , drained and rinsed1 can (19 oz/540 mL) black beans, drained and rinsed

- 1/3 cup diced sweet green pepper 1/3 cup diced sweet green pepper

- 1 cup shredded smoked Cheddar cheese 1 cup shredded smoked cheddar cheese

Preparation
Brush large skillet with half of the oil; heat over medium heat. Cook 2 quesadillas, turning once, until golden and crisp, about 6 minutes. Cut in half. Repeat with remaining quesadillas.
Serve with salsa.
