Ingredients
- 1 cup boiling water
- 3/4 cup couscous
- 1 can (19 oz/540 mL) black beans, drained and rinsed
- 1 sweet red pepper, chopped
- 2 green onions, sliced
- 2 tbsp vegetable oil
- 2 tbsp lemon juice
- 2 tbsp wine vinegar
- 1 tbsp Dijon mustard
- 1/2 tsp salt
- 1/2 tsp pepper
Preparation
In large bowl, pour boiling water over couscous; cover and let stand for 5 minutes. Add black beans, sweet red pepper, and green onions.
Whisk together vegetable oil, lemon juice, wine vinegar, Dijon mustard and salt and pepper.
Toss with couscous mixture.
