1 cup (250 mL) boiling water
3/4 cup (175 mL) couscous
1 can (19 oz/540 mL) black_beans; drained and rinsed
1 sweet red pepper, chopped
2 green onions, sliced
2 tbsp (25 mL) each vegetable oil, lemon juice and wine vinegar
1 tbsp (15 mL) dijon mustard
1/2 tsp (2 mL) each salt and pepper
Preparation:
In large bowl, pour boiling water over couscous; cover and let stand for 5 minutes. Add black beans, sweet red pepper, and green onions.
Whisk together vegetable oil, lemon juice, wine vinegar, Dijon mustard and salt and pepper.
Toss with couscous mixture.
