Ingredients
- 1-1/2 lb fish fillets, (such as catfish or tilapia)
- 1/3 cup light mayonnaise
- 1 tbsp grated lemon rind
- 1/2 tsp cracked black pepper
- 1/4 tsp salt
- Lemon wedges
Preparation
Arrange fish in single layer on foil-lined rimmed baking sheet; set aside.
In bowl, stir together mayonnaise, lemon rind, pepper and salt ; spread over fish.
Broil fish about 8 inches (20 cm) from heat until golden brown on top and fish flakes easily when tested, about 10 minutes. Serve with lemon wedges.
