1-1/2 lb (750 g) fish fillets (such as catfish or tilapia)
1/3 cup (75 mL) light mayonnaise
1 tbsp (15 mL) grated lemon rind
1/2 tsp (2 mL) cracked black pepper
1/4 tsp (1 mL) salt
Lemon wedges
Preparation:
Arrange fish in single layer on foil-lined rimmed baking sheet; set aside.
In bowl, stir together mayonnaise, lemon rind, pepper and sa< spread over fish.
Broil fish about 8 inches (20 cm) from heat until golden brown on top and fish flakes easily when tested, about 10 minutes. Serve with lemon wedges.
