Carrot and Onion Packet

This easy side for the grill is packed with vitamins, plus kids love to get their own packet. In-season asparagus or green beans can easily replace the carrots.

Preparation:

Halve carrots lengthwise; cut into 3-inch (8 cm) lengths.

Cut 24-inch (60 cm) length of heavy-duty foil; fold crosswise in half.

Unfold foil; mound carrots and onion on 1 side close to fold. Drizzle with butter; toss with parsley, salt and pepper. Fold foil over; fold in sides and seal to form packet.

Place on grill over medium-high heat; close lid and cook, turning once, until tender-crisp, about 12 minutes. Let stand for 2 minutes before opening. To serve, shake gently to distribute seasonings. Drizzle with lemon juice (if using).

  • Variations
    Asparagus and Sweet Pepper Packet: Replace carrot and onion with 1 lb (500 g) asparagus, trimmed, and 1 sweet red pepper, thinly sliced. Cook for about 10 minutes.

    Green Bean and Mushroom Packet: Replace carrot and onion with 12 oz (375 g) green beans, trimmed, and 2 cups (500 mL) sliced mushrooms. Cook for about 15 minutes.
