Catfish Fingers with Cajun Mayonnaise

1 lb (500 g ) catfish fillets
1/4 tsp (1 mL) each salt and pepper
1/2 cup (125 mL ) cornmeal
2 tsp (10 mL ) vegetable oil
Cajun Mayonnaise:
1/3 cup (75 mL ) light mayonnaise
1 green onion, thinly sliced
1-1/2 tsp (7 mL ) lemon juice
1 tsp (5 mL ) cajun seasoning
Preparation:
Cut catfish crosswise into 1-inch (2.5 cm) wide strips; sprinkle with salt and pepper. Sprinkle cornmeal in shallow dish; press fish into cornmeal, turning to coat.
Brush oil over rimmed baking sheet; heat in 450°F (230°C) oven for 5 minutes. Arrange catfish on prepared sheet; bake, turning once, until golden and fish flakes easily when tested, about 10 minutes.
Cajun Mayonnaise: Meanwhile, in bowl, stir together mayonnaise, onion, lemon juice and Cajun seasoning. Serve with fish.
