Cauliflower and Celery Puree

Ingredients

  • 1/2 head of cauliflower, (about 1 lb/500g), chopped
  • 1/2 stalk celery, chopped
  • 1 tbsp extra-virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp chopped fresh chives or green onions

Preparation

In saucepan of boiling salted water, cook cauliflower and celery, until softened, 10 to 12 minutes. Drain and transfer to food processor.

Add olive oil, salt and pepper; process until consistency of mashed potatoes. Stir in chives or green onions.
