Ingredients

  • 1 tbsp extra-virgin olive oil
  • 1 large sweet onion, sliced
  • 2 cloves garlic, sliced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp white wine vinegar
  • 1/4 tsp dried thyme
  • 8 oz strip loin grilling steak
  • 2 soft oval buns
  • 4 slices provolone cheese
  • Pickled pepper, (optional)

Preparation

In skillet, heat oil over medium-low heat; cook onion, garlic, half each of the salt and pepper, the vinegar and thyme until very soft and slightly caramelized, about 20 minutes.

Meanwhile, sprinkle steak with remaining salt and pepper. Place on greased grill over medium-high heat; close lid and grill, turning once, until desired doneness (about 8 minutes for medium-rare). Transfer to cutting board and tent with foil; let stand for 10 minutes before thinly slicing.

Cut buns in half; top each cut side with cheese and grill until melted. Sandwich steak, onions, and peppers (if using) in buns.
