Chicken With Noodles, Shiitake Mushrooms and Snow Peas

Japanese udon noodles are usually served in a mild-flavoured broth, but here they star in a tasty sauce. Linguine makes a good substitute; just cook it for about 2 minutes less than package directions, since they finish cooking in the sauce.

  • 1 tbsp 1tbspvegetable oil
  • 1 lb 1lbboneless skinless chicken thighboneless skinless chicken thighs, thinly sliced
  • 2 tsp 2tspminced garlic
  • 2 tsp 2tspminced fresh ginger
  • 2 cups 2cupsstemmed shiitake mushroomshiitake mushrooms, thinly sliced
  • 1/2 cup 1/2cupwater
  • 1/4 cup 1/4cuphoisin sauce
  • 1 tbsp 1tbspoyster sauce
  • 1 tsp 1tspsambal oelek or hot sauce
  • 4 pkg (7 oz/200 g each) 4pkg (7 oz/200 g each)fresh Udon noodleUdon noodles
  • 1 cup 1cupsnow peasnow peas, thinly sliced lengthwise
  • 1 tsp 1tspsesame oil

In wok or large skillet, heat vegetable oil over medium-high heat; stir-fry chicken, garlic and ginger until chicken is lightly browned, about 5 minutes.

Add mushrooms; stir-fry until beginning to soften, about 2 minutes. Stir in water, hoisin sauce, oyster sauce and sambal oelek; bring to simmer.

Add noodles and toss to combine; simmer until sauce is thickened, 2 to 3 minutes. Add snow peas and sesame oil; cook for 1 minute.
