Ingredients

  • 1 cup 1cupchicken stock or vegetable stock or water
  • 1 pinch 1pinchsalt
  • 1 cup 1cupfrozen peas
  • 1 cup 1cupgrated zucchini
  • 2/3 2/3cup whole wheat couscous
  • 2 tbsp 2tbspchopped fresh parsley or coriander

Preparation

In saucepan, bring 1 cup (250 mL) chicken stock and salt to boil. Remove from heat.

Stir in frozen peas, zucchini and couscous. Cover; let stand for 5 minutes.

Fluff with fork. Stir in fresh parsley or coriander.
