Couscous and Peas
This recipe makes 4 servings
- Portion size: 4 to 6
- 1 cup 1cupchicken stock or vegetable stock or water
- 1 pinch 1pinchsalt
- 1 cup 1cupfrozen peas
- 1 cup 1cupgrated zucchini
- 2/3 2/3cup whole wheat couscous
- 2 tbsp 2tbspchopped fresh parsley or coriander
In saucepan, bring 1 cup (250 mL) chicken stock and salt to boil. Remove from heat.
Stir in frozen peas, zucchini and couscous. Cover; let stand for 5 minutes.
Fluff with fork. Stir in fresh parsley or coriander.
