Cranberry Shallot Vinaigrette
Servings: 1 cup (250 mL)
Ingredients:

1/2 cup (125 mL) frozen cranberry concentrate, thawed
1/4 cup (50 mL) each vegetable oil, water and red wine vinegar
2 tsp (10 mL) grainy mustard
2 shallots, minced
1/2 tsp (2 mL) each salt and pepper
Preparation:
In bowl or jar, whisk or shake together cranberry concentrate, vegetable oil, water, red wine vinegar, mustard, shallots, salt and pepper. (Make-ahead: Refrigerate in airtight container for up to 3 days.)
