    1 onion, thinly sliced
    8 slices sourdough or multigrain bread
    2 tbsp (25 mL) honey mustard or plain mustard
    10 oz (300 g) sliced smoked ham
    5 oz (150 g) aged Gouda or old Cheddar cheese, sliced

Preparation:

Serve with: Quick Dill Pickles

In skillet, heat 2 tsp (10 mL) vegetable oil over medium heat; fry onion and 1/4 tsp (1 mL) each salt and pepper, stirring occasionally, until tender and golden, about 10 minutes.

Brush bread with mustard. Cover half of the slices with smoked ham; top with onion and cheese. Sandwich with remaining bread.

In same skillet, heat 2 tsp (10 mL) vegetable oil over medium-low heat; cook sandwiches, pressing with spatula and turning once, until bread is crusty and cheese is melted, about 8 minutes.
