Ingredients
- 3 parsnips , peeled & chopped3 3parsnipparsnips, peeled & chopped
- 2 potatoes , peeled & chopped2 2potatoes, peeled & chopped
- 3 cloves garlic 3 3cloves garlic
- 2 tbsp butter 2 2tbsp tbspbutter
- 1/2 tsp Dijon mustard 1/2 1/2tsp tspDijon mustard
- 1/4 tsp salt 1/4 1/4tsp tspsalt
Preparation
In large saucepan of boiling salted water, cook parsnips, potatoes, and garlic until tender, about 15 minutes. Drain and return to pan.
Using potato masher, mash with butter, mustard and salt until smooth.
