Grapefruit Avocado Salad

  • 2 2grapefruit or navel oranges
  • 3 tbsp 3tbspgrapefruit juice or orange juice
  • 1 tbsp 1tbspextra virgin olive oil
  • 1 tsp 1tspfinely chopped jalapeño pepperjalapeño peppers or green onions
  • 1 pinch 1pincheach of salt and pepper
  • 1 pinch 1pinchgranulated sugar
  • 6 cups 6cupstorn romaine lettuce or leaf lettuce
  • 2 2avocadoavocados, peeled and sliced

Cut rind and pith from grapefruits or navel oranges; slice between membranes and pulp to release sections. Set sections aside. Squeeze membranes to extract 3 tbsp (50 mL) juice.

In bowl, whisk together juice, olive oil,  jalapeño peppere, salt, pepper and granulated sugar. Add grapefruit sections, romaine and avocados. Toss to combine.
