Give your bottle of Caesar dressing a break tonight. This homemade Greek salad dressing is ready in minutes with ingredients from your pantry.
Ingredients
- 4 cups 4cupstorn romaine lettuce
- 1 cup 1cupcherry tomatocherry tomatoes, halved
- 1 cup 1cupcubed English cucumberEnglish cucumbers
- 1/2 1/2sweet green peppersweet green peppers, chopped
- 1/3 cup 1/3cupsliced red onionred onions
- 1/4 cup 1/4cupcrumbled feta cheese
- 8 8kalamata olivekalamata olives Dressing:
- 2 tbsp 2tbspextra-virgin olive oil
- 1 tbsp 1tbspred wine vinegar
- 1 1minced clove of garlic
- 1/4 tsp 1/4tspdried oregano
- 1 pinch 1pinchpepper
Preparation
Dressing: In glass measure, whisk together oil, vinegar, garlic, oregano and pepper; set aside.
In large bowl, toss together lettuce, tomatoes, cucumber, green pepper and onion. Pour dressing over top and toss to coat. Sprinkle with feta cheese and olives.
