Ingredients

  • 2 tbsp 2tbsplime juice
  • 1 tbsp 1tbspfish sauce
  • 1 tbsp 1tbspvegetable oil
  • 2 tsp 2tspminced gingerroot
  • 2 tsp 2tspgarlic, minched
  • 1 pinch 1pinchgranulated sugar
  • 1 1English cucumberEnglish cucumbers
  • 2 cups 2cupsshredded romaine lettuce
  • 1 1sweet red peppersweet red peppers, julienned
  • 1 1large carrotcarrots, julienned
  • 1 1jalapeno pepperjalapeno peppers, seeded and thinly sliced
  • 1/4 cup 1/4cupchopped fresh basil
  • 2 2beef rib grilling steak, (about 4 oz/125 g each)
  • 1/2 tsp 1/2tspsalt
  • 1/2 tsp 1/2tsppepper
  • 1 1green oniongreen onions, thinly sliced
  • 2 tbsp 2tbspchopped roasted cashews or peanuts

Preparation

In small bowl, whisk together lime juice, fish sauce, oil, ginger, garlic and sugar; set aside.

Slice cucumber in half lengthwise; remove seeds and thinly slice. Place in large bowl; add lettuce, red pepper, carrot, jalapeño pepper and basil. Set aside.

Sprinkle steaks with salt and pepper. Place on greased grill over medium-high heat; close lid and grill, turning once, until medium-rare, about 7 minutes. Transfer to plate and let stand for 5 minutes before thinly slicing across the grain.

Add steak to salad along with dressing; toss to coat. Divide among plates; garnish with green onion and cashews.
