Ingredients

  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp vegetable oil
  • 2 tsp minced gingerroot
  • 2 tsp garlic, minched
  • 1 pinch granulated sugar
  • 1 English cucumber
  • 2 cups shredded romaine lettuce
  • 1 sweet red pepper, julienned
  • 1 large carrot, julienned
  • 1 jalapeno pepper, seeded and thinly sliced
  • 1/4 cup chopped fresh basil
  • 2 beef rib grilling steak, (about 4 oz/125 g each)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 green onion, thinly sliced
  • 2 tbsp chopped roasted cashews or peanuts

Preparation

In small bowl, whisk together lime juice, fish sauce, oil, ginger, garlic and sugar; set aside.

Slice cucumber in half lengthwise; remove seeds and thinly slice. Place in large bowl; add lettuce, red pepper, carrot, jalapeño pepper and basil. Set aside.

Sprinkle steaks with salt and pepper. Place on greased grill over medium-high heat; close lid and grill, turning once, until medium-rare, about 7 minutes. Transfer to plate and let stand for 5 minutes before thinly slicing across the grain.

Add steak to salad along with dressing; toss to coat. Divide among plates; garnish with green onion and cashews.
