Ingredients

  • 1-1/2 cups 1-1/2cupssodium-reduced chicken stock or water
  • 1 cup 1cuplong-grain rice
  • 1/4 tsp 1/4tspsalt
  • 1/3 cup 1/3cupminced fresh parsley or coriander
  • 1 1green oniongreen onions, finely chopped
  • 1 1clove garliccloves of garlic, minced
  • 1 tbsp 1tbspextra-virgin olive oil

Preparation

In saucepan, bring chicken stock or water, long-grain rice; and salt to boil. Reduce heat to low; cover and simmer until tender, about 20 minutes.

Stir in fresh parsley and/or coriander, green onion, garlic and olive oil.
