Herb Rice
Servings: 4
Ingredients:

1-1/2 cups (375 mL) sodium-reduced chicken stock or water
1 cup (250 mL) long-grain rice
1/4 tsp (1 mL) salt
1/3 cup (75 mL) each minced fresh parsley and/or coriander
1 green onion, finely chopped
1 clove garlic, minced
1 tbsp (15 mL) extra-virgin olive oil
Preparation:
In saucepan, bring chicken stock or water, long-grain rice; and salt to boil. Reduce heat to low; cover and simmer until tender, about 20 minutes.
Stir in fresh parsley and/or coriander, green onion, garlic and olive oil.
