    1-1/2 cups (375 mL) water
    1 cup (250 mL) jasmine or other long-grain rice
    1/4 tsp (1 mL) salt
    1 tbsp (15 mL) grated lemon rind
    1 green onion (green part only)

Preparation:

In saucepan, bring water, rice and salt to boil. Reduce heat to low; cover and simmer until tender and no liquid remains, about 20 minutes.

Stir in lemon rind and green onion. Let stand, covered, for 5 minutes.
