Ingredients

  • 2 tbsp vegetable oil
  • 1 tbsp rice vinegar
  • 1 tsp grainy mustard
  • 1 pinch salt
  • 1 pinch pepper
  • 4 cups baby spinach leaves
  • 1/2 cup bean sprouts
  • 1/4 cup sliced almonds, optional
  • 3 radishes, thinly sliced
  • 1 green onion, sliced
  • 1 can mandarin orange sections, drained and patted dry

Preparation

In large bowl, whisk together oil, vinegar, mustard, salt and pepper. Add spinach, bean sprouts, almonds (if using), radishes, green onion and oranges; toss to combine.
